Assistant Professor Ronald Cole, who teaches Food and Beverage Management, comes to our program from Rochester Institute of Technology's School of Food, Hotel, and Tourism Management, where he taught courses in Restaurant Operations and Management and Decision-Making for Food Service Operations. In addition, he developed computer-simulation modules for financial analysis and served as a faculty advisor for the annual $250-a-plate fundraiser, "Puttin' on The Ritz."
Professor Cole brings to the program a diverse background in Food and Beverage Operations that began 17 years ago when he took a summer job as a chef's assistant in a small family operated restaurant. What started as a part-time summer job became a three-year hiatus where Professor Cole learned all the positions in the restaurant, from dishwasher to bartender. He went on to pursue his education at the State University of New York at Canton, where he was an Alumni Scholar graduating Summa Cum Laude with an A.A.S. in Hotel Technology.
Professor Cole continued his studies at Rochester Institute of Technology's School of Food, Hotel, and Tourism Management, where, as an Arthur Packard Scholar, he earned his B.S. in Hotel and Resort Management, and his M.S. in Hospitality and Tourism Management. Professor Cole's industry background includes European experience. He was a member of the management team that opened The International Village at the Trocadero, in London, England: a 23 kitchen operation that served over 4,000 customers per day. In the U.S., Professor Cole has worked as a Manager of Catering and Concessions for the Finger Lake Performing Arts Center, where he designed and prepared custom gourmet menus for such performing artists as: Steve Winwood, Billy Crystal, Stevie Nicks and Bonnie Raitt. In addition, he has worked several seasons as a Head Chef in the Catskill region and was responsible for administering a Culinary Arts training program for Marriott Corporation.
Professor Cole looks forward to developing the Commercial Foods area of our program. Professor Cole is currently developing multimedia applications for educating and training hospitality professionals.
